Chef Frederic Monti's Plated Dessert and Petit Fours 5-Star Chef Series was a great course filled with fresh and novel concepts for plated desserts. Showcasing his knack for taking a classic favorite and applying a new pastry twist, Chef Monti reinvented the Snickers® Bar.

 

Zen Berry (view recipe)

A delicate sponge cake layered with a zesty orange chiboust, Zen Berry was one of the featured desserts in Chef Frederic Monti's Plated Dessert and Petit Fours 5-Star Chef Series. The Zen Berry combines the flavors of PreGel Hazelnut Regina Traditional Paste, PreGel Roasted Almond Traditional Paste, PreGel Fig Arabeschi®,PreGel Orange Fortefrutto®, PreGel Cristalberry Arabeschi® (Cranberry). This dessert was so well received during the 5-Star Chef Series that it was recently featured in the Pastry and Baking North America magazine.  

 

Exotic Sugar Sphere (view recipe)

The Exotic Sugar Sphere was one of the featured recipes in Chef Frederic Monti's Plated Dessert and Petit Fours 5-Star Chef Series. The exotic sugar sphere encapsulates the delicious flavors of coconut, pineapple and banana within a hand-crafted sugar sphere.
